The temperature here is deliberate. Most air fryer fish recipes call for 400°F, which produces more Maillard browning and crispier texture but also generates significantly more advanced glycation end products (AGEs) and oxidizes the polyunsaturated fats faster. At 350°F for 14-15 minutes, tilapia cooks through gently, omega-3 oxidation is reduced, and AGE formation is minimized. The trade-off is less browning. The dulse and lemon zest compensate by providing enough surface flavor that you do not miss the crust.

5 oz tilapia fillet
1/2 tsp dulse flakes
1 tsp lemon zest
1/2 tsp garlic powder
1/4 tsp turmeric
1/4 tsp black pepper

Instructions

  1. Pat the tilapia fillet completely dry with paper towels. Moisture on the surface steams the fish instead of cooking it cleanly.
  2. Season both sides with dulse flakes, lemon zest, garlic powder, turmeric, and black pepper.
  3. Place in the air fryer basket. Do not overlap if cooking multiple fillets.
  4. Air fry at 350°F for 14-15 minutes. The fish is done when it flakes easily with a fork and the internal temperature reaches 145°F.
  5. Squeeze lemon wedge over the top before serving.

Seasoning Variations

All variations use the same 350°F / 14-15 min method. Swap the base seasoning for:

Cumin Lime

  • 1/2 tsp cumin, 1/2 tsp garlic powder, lime zest, black pepper. Squeeze lime instead of lemon at serving.

Smoked Paprika Garlic
#

  • 1 tsp smoked paprika, 1/2 tsp garlic powder, black pepper, dulse. The paprika adds color that compensates for the lower browning temperature.

Dulse Caper
#

  • 1/2 tsp dulse, 1 tbsp capers (rinsed and patted dry), garlic powder, black pepper. Place capers on top of the fillet before air frying — they crisp up and pop with salt and brine.

Lower temperature = fewer AGEs. Advanced glycation end products accumulate in tissues and correlate with accelerated aging. Dry-heat cooking at high temperatures is the primary dietary source. Dropping from 400°F to 350°F measurably reduces AGE formation while still fully cooking the protein.

Omega-3 oxidation is the other reason to cook fish gently. Polyunsaturated fats are structurally fragile — high heat breaks double bonds and produces lipid peroxides. Lower temperature preserves more of the EPA and DHA you are paying for.

Dulse replaces salt and adds iodine, potassium, and iron. Tilapia is a mild fish, so the dulse’s subtle brininess is the right match — it does not fight the lemon.
